Chicken Milanese

Happy 2 year anniversary to us! It worked out perfect that Jeffrey returned in time for us to celebrate our 2 year anniversary. I planned a trip for us to spend the night away at a fabulous hotel in Dana Point! The Laguna Cliffs Marriott was perfect and had a beautiful view. They even sent us Champagne and strawberries to our room. The time away was just what we needed to reconnect after being apart from one another for a month.

I planned this dinner for the night Jeffrey was coming home, then he didn't come home that night so I ate this beautiful meal by myself. Mom and I made this dinner while at the ranch. It is from Gwyneth Paltrow's cookbook.

Chicken Milanese
1/4 cup cherry tomatoes
salt and pepper
1 Tbsp olive oil
1/4 red onion, diced
1/2 avocado, diced
1/2 cup arugula
1 lime, juiced
4 chicken tenders
1 cup panko bread crumbs
1/4 cup flour
1/4 tsp garlic powder
1/2 cup milk
1/2 cup vegetable oil
 Preheat oven to 400. Drizzle olive oil over tomatoes and sprinkle with salt and pepper. Roast in oven for 20 minutes.
Dice onion 
 Soak in cold water for about 5 minutes.
 Dice avocado. Mix together avocado, onion and lime juice, set aside.
 Pound chicken tenders very thin, almost until you can see through them (use the flat side of the hammer, not the jagged).

 Remove tomatoes from oven and allow them to cool completely, then add to the onion, avocado mixture.
Mix together panko, flour, salt pepper and garlic powder.
 Dip chicken in milk then coat in bread crumbs.

 Heat oil in pan and cook chicken until golden on both sides. About 5 minutes for each side.

 Remove from oil and drain on paper towels.

Plate with 1/4 cup arugula, then chicken, the top with relish and serve!
I served my chicken with spaghetti mixed with lemon, parmesan and olive oil, and roasted asparagus, is was all YUM!
