Parmesan Baked Tilapia

Rain, Rain, don't go away! I LOVED the full day of rain we had today. I didn't even mind running errands in the rain. Then suddenly the sun came out and I was disappointed. The cool rainy weather felt like a real Fall day. Now that the weather is changing I hope to get in the mood to start thinking about Christmas presents. Last year I was way ahead of the game when I stared shopping in August. This year I can't seem to think of gifts to give anyone.

PS, ONE DAY till J comes home!!!

Parmesan Baked Tilapia
2 Tilapia Filets
1/4 cup parmesan
2 tsp chopped fresh dill
2 Tbsp butter, room temp.
1 clove garlic, minced
salt and pepper
 Preheat oven to 400.
Pat tilapia dry with paper towels.
Sprinkle lightly with salt and pepper (parmesan is salty, so you could skip the salt). Place in the oven for 10 minutes.
Stir together butter, dill, parmesan and minced garlic.

Remove fish from oven and carefully flip it over.
Spread butter/cheese mixture over the fish.
Put under the broiler for 2-3 minutes.
 Serve with lemon wedges.
