Shirred Eggs

Every morning at the ranch we made breakfast for the employees of Sewell. This breakfast really surprised me. I usually don't like eggs, but these were fantastic. That is one of the best parts of cooking with my mom, I always find new recipes!

Shirred Eggs
for 2 eggs:
2 large eggs
2 pieces sliced ham
salt and pepper
2 Tbsp heavy cream
4 Tbsp shredded swiss cheese
1 tsp chopped chives
Preheat oven to 350. Spray either a muffin tin or a small baking cup. 
Place slice of ham in cup.
 Drop one egg in each cup. If you are using a larger cup you can drop 2 eggs (but you will need a larger piece of ham too)
 Sprinkle with salt and pepper. Place in oven for 10 minutes.
 Grate cheese
 Remove egg from oven and drizzle with cream.
 Sprinkle with cheese.
 and chopped chives!
Place back in the oven for 6-8 more minutes or until no longer jiggly.
Remove if you are using a muffin tin instead of individual cups, carefully remove from muffin tin and serve.
Here is what a bigger shirred egg looks like, using bigger individual baking cups, 2 eggs and a bigger piece of ham. We made them this way at the ranch.

We had this for breakfast today and it was so good. I didn't think the ham cup would hold it's shape, but it did! What a nice Sunday morning treat. :-)
