Beer Biscuits

I am not sure why, but I have been posting a lot of breakfast items lately, and there is more to come! Beer Biscuits bring back fun memories of my Grandmother's best friend, Pat, or as we always called her "Pat Friend." And of my best childhood friend, Stacey, who is Pat's granddaughter. Pat would often make us beer biscuits growing up. They are sooo good and easy.

Beer Biscuits
2 1/4 cups of baking mix
2 Tbsp sugar
1 cup of beer
Preheat oven to 375 degrees.
Sift together baking mix and sugar.
Stir in beer.

Knead a few times. (ps: at this point you could make them into drop biscuits and drop about 1/4 cup of dough for each biscuit onto the cookie sheet)
Flatten out and cut into rounds with a round cookie cutter (or a small glass).
Place on a greased cookie sheet.
Bake for 8-10 minutes. 
I served these with my shirred eggs and topped the biscuits with butter and strawberry jam!
