Cast Iron Meat and Potato Pie

I LOVE this new dish! It is perfect for a fall dinner. Wish I had some right now for this chilly, rainy day. BUT, I am off to dinner with the 3Bs. We are celebrating our 1 year anniversary of being besties! Love my girls!

Cast Iron Meat and Potato Pie

3 links sausage (I used italian chicken sausage)
1/4 pound bacon, diced
2 tsp olive oil
1/2 onion
1/2 cup celery, chopped
2 cloves garlic
1/4 cup parsley
1 cup Kale
pinch salt
pinch nutmeg
pinch cinnamon
1 1/2 cups mashed potatoes
3/4 cup shredded cheddar cheese
Preheat oven to 450.
Chop onion, celery and parsley. Cut stems out of kale and chop into bite size pieces.
Heat oil olive in cast iron skillet. Cook sausage and bacon until done.
I bought frozen mashed potatoes then heated them up.
Remove meat from skillet. Add onion, celery, kale and parsley to skillet and cook for a few minutes until softened.

Add seasonings to skillet.

Add meat back to skillet. Add a splash of water (about 3 Tbsp).
Spread mashed potatoes evenly over top of veggies and meat.
Sprinkle with cheese.
Bake for 15-20 minutes.

I was a little unsure about this, but I had all the ingredients so I thought I'd give it a try. It was actually great. I did use spinach instead of kale since that's what I had on hand. Hubby quickly claimed the leftovers to take to work today! Thanks :)
