Steak Tacos

My SIL (sister in law) and her hubby are coming back to visit tomorrow! They are incredibly athletic and are running in a half marathon in Griffith Park on Saturday. Sadly, beautiful, sunny, LA is not going to be so sunny for them this weekend. It is supposed to rain all day Saturday. They are serious runners and it won't stop them. We are so happy to have them back!! Now off to clean, clean, clean!!

I was inspired to make these after having some really great steak tacos from Dream Dinners last month. They didn't turn out the same, but they were still yummy.

Marinate:
juice of 1 lime
1 Tbsp of white vinegar
1/4 tsp cayenne pepper
1/4 tsp garlic powder
1/4 cup chopped cilantro
salt and pepper
1 sirloin steak
Marinate the steak overnight.

Tacos:
marinated steak
Flour tortillas (I used whole wheat)
Fat free re fried beans
1/2 tomato
2 green onions
2 Tbsp of cilantro
juice of 1/2 lime
Chop tomato, green onion and cilantro. 
Mix together with lime juice and set aside.
Remove steak from marinate. cut fat off steak and season with salt and pepper or a steak seasoning.
Grill for 3-4 minutes on each side.

Remove and allow to sit for a few minutes.
Slice steak across the grain.
Warm up beans. Spread beans on tortillas the top with steak and pico.

Serve with rice.
