Sweet Potato Pancakes with Honey Butter

I have been waiting (impatiently) to post about my craft project that SIL and I did over Thanksgiving, until it was given to our Aunt Carol as a surprise. Aunt Carol and Uncle Jerry host our Christmas in Ruidoso every year. Katy and I have made it a tradition to give her a Christmas nick knack each year. I saw these adorable pine cone elves on Pinterest and knew we could make them better. We had a blast making them and now I want to make some for myself!!

Who doesn't love pancakes?? Sweet Potato Pancakes are sooo moist and cakey! You will love these for breakfast!

Sweet Potato Pancakes with Honey Butter
For Pancakes:
1 1/4 cups mashed sweet potatoes, I used canned
2 eggs
1 cup buttermilk
1 cup baking mix
2 1/2 Tbsp vegetable oil
pinch of cinnamon
pinch of nutmeg

For Honey Butter:
1/2 cup butter, room temp
3-4 Tbsp honey, to your taste
1 tsp cinnamon

Mix together buttermilk, eggs and oil.
Stir together butter, honey and cinnamon. My butter wasn't softened so I melted it then refrigerated the mix for a little bit. Taste and add more honey or cinnamon to your liking! Set aside until ready to use.
Mash sweet potatoes.
Stir baking mix and spices into pancake mix.
Stir sweet potatoes into mix.
Melt some butter on your griddle.
Pour about 1/3 cup of batter for each pancake.
When the batter begins to bubble, carefully flip to the other side. 
This batch made enough for 3 people. If you are serving more, make more batter, they will go fast!
Scoop about 1-2 Tbsp of honey butter on top of the pancakes! Love me some honey butter!
