Cinnamon Sugar Palmier

3Bs baking Day Part Four: This is the final installment.... S is for Sarah! I just got home from Meg's daughter Sarah's first birthday party. I will post pictures on that tomorrow. These S shaped Palmier cookies came from Martha Stewart. I saw her making them on the Today Show and knew they would be perfect for our Baking Day.

Cinnamon Sugar Palmier
1 cup of sugar
1 tsp cinnamon
2 sheets puff pastry, thawed
3 ounces dark chocolate, optional (we didn't even use it, it was for drizzle some melted chocolate over them if you want, but we thought they were just as good without it)
Em is ready!
Stir together cinnamon and sugar, it looks like more than 1 tsp of cinnamon was used here, feel free to add more if you would like.
I like this picture because it shows off Em's beautiful Christmas nails...soooo shiny!
Sprinkle work surface with 1/2 cup of sugar mix.
Place puff pastry over and sprinkle with 3 Tbsp of sugar mix.
Gently roll over dough to adhere sugar to the front and back of the pastry.
Start on one end and roll up halfway, then turn it over and roll the other end up the other half.
See!

Place in the freezer for about 15 minutes.
Remove and slice crosswise into 1/2 inch pieces.

Line a cookie sheet with parchment paper. Dip each cookie in sugar mix and then place cookies on sheet. 
Bake on 375 for 12 minutes, then flip each cookie over and bake for 5 more minutes on the other side.
Remove from oven and place on a cooking rack.
