Sour Cream and Onion Kale Chips

Every year we have to take lots and lots of photos with Jeffrey's family. Most everyone complains and sighs..but I love them! I like to look back on the old ones and see how we have changed (for the better!) and how the family has grown, first with spouses and now with children!
I have to say a BIG thank you to Aunt Carol and Uncle Jerry who host us at their beautiful home each year. FYI everyone in these photos stays as this house for about a week. We have a blast, but it is a lot of work and we all really appreciate your generosity.

Each year I make dinner for the whole bunch of 18! Luckily this blog prepares me for the job and I have great sus chefs to help me. I made one of my favorites at the moment, Chicken Milanese, for the main dish, but tried some new appetizers for fun! Most everyone had never tried Kale chips. I knew this crowd would like them and I was right! I found this recipe on Pinterest, but decided to change it up a little and they were great.

Sour Cream and Onion Kale Chips
2 Tbsp lemon juice
1 1/4 Tbsp apple cider vinegar
1 Tbsp olive oil
1 1/8 tsp onion powder
1 Tbsp water
1/4 tsp salt, plus more to taste
1 bunch kale
Preheat oven to 250
Wash and dry kale. Pull apart into bit sized pieces, removing the tough inner stem.
Whisk together lemon, vinegar, salt, olive oil, water and onion powder. In 2 batches pour half the mixture in a large bowl with the kale. 
Toss to coat lightly.
Spray 2 baking dishes spread the kale chips on the pans. You do not want the kale to be soggy or else it will not crisp up.
Bake for 12 minutes, then pull them out and turn them over, bake again for 12 more minutes. Keep watch you may need more or less time depending on you oven.

Remove and salt to taste.
Pour into a serving bowl.
Everyone loved them!
