Dill Pickle Soup

This is a weird one I know, but I love pickles and I love soup, so I thought I would give it a try. I found it on Tasty Kitchen and it is a Polish Soup called Ogorkowa. Anyways it really was good, but only if you like pickles!

Dill Pickle Soup
1/2 onion, diced
1 Tbsp olive oil
1 Tbsp butter
1 cup water
2 cups chicken broth
1/2 cup dill pickle juice
2 potatoes or 4 mini potatoes
2 whole pickles
4 stalks celery
1 carrot
1/2 tsp salt
1/4 tsp pepper
1/2 cup sour cream
1 Tbsp flour
1-2 Tbsp fresh dill for garnish
Dice onion
Peel carrots and potatoes, then dice them and the celery

Shred the pickles.
Heat olive oil and butter in a stock pot and add onion. Cook until tender.
Add water, chicken broth and..
Pickle juice to pot.
Heat until it begins to boil.
Add the vegetables 
and the pickles to the pot.
Season with salt and pepper. Allow soup to simmer for about 15 minutes, or until potatoes are tender.
Stir together (in a bigger bowl than this) sour cream and flour.

Slowly whisk in 1/2 cup of the hot soup liquid to the sour cream, then another 1/2 a cup to the liquid. This will prevent the cream from coddling when it is added to the soup.

Add the cream to the pot.
Cook for about 5 minutes to thicken.

Serve with a dollop of sour cream and a sprinkle of fresh dill. I don't know about you, but everytime I eat a grilled cheese, it is not complete without a pickle! So I thought a grilled cheese would be a perfect complement to this soup...YUM!
