Baked Hot Chocolate

My lil sissy is here! We had a shopping marathon today that wore us out! We were planning on going out to eat sushi, but decided to make it a night in. I am making us Orange Chicken, yum! I may have to make this dessert for us while she is here. I made them for the 3Bs a few weeks back and I have been thinking about it every since.

Baked Hot Chocolate
9 ounces high quality semisweet chocolate
6 Tbsp butter
4 eggs
1/4 cup sugar
Homemade whip cream:
1/4 cup heavy cream
1 Tbsp sugar
Preheat oven to 350
Chop chocolate fine.
Melt chocolate and stir butter into warm chocolate until it is blended. (I melted it in the microwave in 30 second intervals. You can also do it over a double broiler.)
Whip eggs over simmering water until it eggs are warm to touch.
Use a hand mixer to blend together warm eggs and 1/4 cup sugar until light and fluffy 3-5 minutes.
Gently fold chocolate mixture into egg mixture.
Pour chocolate mixture into 4 oven proof coffee mugs. Place mugs in a baking dish and fill with water halfway of the sides of the mugs. Bake for 15-20 minutes.
Whip heavy cream and 1 Tbsp of sugar together until it forms stiff peaks.

Top baked hot chocolate with a dollop of whip cream.
These are incredible hot, but also taste great leftover, cold! And because they are so rich, you may want to save the leftovers for the next day.
