Chicken Caesar Salad

J is out of town so I haven't been sleeping well. I took a nap after work today and now I can't make myself get up! I guess I slept too long. I need to get myself up now and clean, clean, clean....ugh!

I love this Caesar dressing recipe. It is from my co-worker Cat. There is no egg or anchovy involved and it has the perfect Caesar Dressing flavor! I bought those frozen chicken breasts and have found many great uses for them. Of course you could make your own breaded chicken breast or grilled chicken breast or even shrimp! 

Chicken Caesar Salad
lettuce- I used spinach, but Romaine would work better
Frozen Breaded Chicken Breast- cooked
Parmesan shavings
1 garlic clove
3 Tbsp olive oil
2 Tbsp lemon juice
1 tsp Dijon mustard
1/4 tsp kosher salt
freshly ground black pepper
optional: croutons

The garlic was hiding in the picture above. This is the Dijon that was recommended for me to use for this dressing. It is really good and can be found at Cost Plus World Market or Williams Sonoma.
Remove the paper skin from the garlic. Place in the bottom of a bowl and crush with the back of a spoon or some sort of crusher like this handy wooden thing!


Drizzle in oil while stirring. This will infuse the oil with the garlic flavor.

Keep stirring or allow it to sit for a few minutes until it is cloudy.
Remove garlic from the oil.
Stir in lemon juice.

Stir in Dijon mustard.

Stir in salt, then taste to see if you need more. That's all, no egg, or anchovy!
Slice cooked chicken breast into bite sized pieces.
Drizzle dressing into lettuce and toss.
Add Parmesan shavings and a good amount of freshly ground black pepper to salad.
Top with chicken and serve!
