I hope you are having a great Saturday. It is one of those weeks where I kept thinking yesterday was Saturday and today is Sunday! Anyways, I am so glad to have a day off tomorrow, it has been a busy few weeks. In 1 week my little sister will be visiting us for her spring break. I am so excited to have some fun activities to post about!
This was a yummy soup! I love coconut milk and lime together, it is a perfect mix. Enjoy!
2-3 Chicken tenders
3 1/2 cups chicken broth
1 inch fresh ginger
1 can unsweetened coconut milk (i used lite)
6 ounces Chinese noodles
6 Tbsp lime juice
3 Tbsp fish sauce (I used oyster sauce)
3/4 cup cilantro
Peel ginger then slice into thin discs.
Heat chicken broth and ginger in stock pot until boils. Reduce heat and cover, simmering for 10 minutes.
Squeeze lime juice.
Add coconut milk to pot. Bring liquid back to a boil.
and noodles to pot. Cook for 5 minutes.
Slice jalapeno and cilantro.
Stir in lime juice
and fish sauce.
Add jalapeno and 1/2 cup cilantro and cook for 1 more minute.
Serve topped with more fresh cilantro.
