Gussied Up Canned Chicken Noodle Soup

I have a head cold! I hate when you get sick and can't taste anything. What I always want when I am sick is chicken noodle soup. There is a great diner around the corner called Fred 62 where I always send Jeffrey to get me some of their chicken noodle soup when I am sick. This time, my body wasn't too sick, just my nose, so I was able to make my own soup. I decided to make a copy cat recipe of my favorite chicken noodle soup from Fred's. Of course homemade soup is better than canned, but I didn't want to go to all that trouble. I made this canned soup taste almost homemade without all the work!

Gussied Up Canned Chicken Noodle Soup

1 can of your favorite chicken noodle soup (I used Progresso, reduced sodium)
1 small carrot
1 celery stick
1 tsp dried onion flakes
1 tsp olive oil
1/2 tsp poultry seasoning 
1/2 cup cabbage mix
1/2 lemon
1/4 cup cilantro
1/4 tsp kosher salt
1/4 tsp ground black pepper
optional: 1 cup chicken broth (to extended the soup for 2)

 Dice carrot and celery. Cook in a saucepan with 1 tsp of oil until tender. Add dry minced onions and cook for 1 minute.
 Pour in soup and poultry seasoning. If you are adding in 1 more cup of chicken broth, add it now. Bring to a boil. 
 Add cabbage  (the cabbage will resemble noodles, but without the extra carbs)
 And cilantro
 Add juice of 1/2 lemon....Then heat for 1 more minute. Season to taste with salt and pepper. (The lemon and cilantro are the secret to making it taste like Fred's soup. Of course you could use fresh parsley if you don't like cilantro.
 Serve immediately. Yum, this recipe will cure a cold for sure, or at least make you feel better!
Luckily, I am feeling somewhat better today!
