Homemade Spinach Pasta

 Then she quickly stuck her cup in Em's tea, which burned her skin when it spilled (this all happened very fast!) She is the cutest thing ever!
 I look soooo stiff here, I guess I had my best posture for tea.

 Sarah needed a walk. She was very well behaved for her first high tea!
 Awww the scones!! With cream and jelly! And I ate the whole thing, not aware that another course of desserts were coming next....oops!
 I loved having my best friends together at once!! Such a fun memory to have....tear!


Homemade Spinach Pasta
2 eggs
1 1/2 cups of flour
5 oz frozen spinach, thawed and drained (mine came out to about 1/2 cup after it was drained)
1 tsp salt
1 Tbsp olive oil
I use a potato ricer to drain all of the water from my spinach.


I did this wrong so don't do what I do! First blend the spinach in a food processor and get it really smooth, then add the 2 eggs to the blend and blend together.
Because I didn't blend the spinach first, it wasn't as smooth as I would have liked it.
Use a kitchen aid mixer. Slowly add egg mixture into flour and then add in salt and oil. Mix until just blended.

Knead a few times with your hands.
Form into walnut size balls of dough.

Using a pasta maker (I love my attachment for my Kitchen Aid Mixer), press out pasta into whatever shape you like. I loved this shape, but the dough wasn't smooth enough so I switched to the spaghetti press.

Either cook right away for a few minutes until it rises to the top, or dry to cook later for 12 minutes.
I made my pasta into one of my favorite pasta dinners, Lemon Tomato and Feta Spinach Pasta.
