I have never been much of an egg person, especially runny eggs. But my favorite steak dinner click here for the recipe, has changed my view on runny eggs, they are delicious with steak! So when I saw Ree make this recipe on her Food Network Show, I was craving it for days until I made them for dinner one night. It is soooo delicious! I am going to make them for Mommasita and Bobo (J's parents) when the visit us for Easter this weekend!
Pioneer Woman's Steak and Eggs
1 big steak or 2 small ones, these were top sirloin
2 Tbsp butter
salt and pepper
Slice steak into bite sized cubes.
Sprinkle with lots of salt and pepper!
Melt butter in a cast iron skillet and wait for the butter to bubble and brown a bit.
Add steak in 1 layer to pan. Cook for 2 minutes.
Quickly turn steak and cook for another minute.
Remove from the pan and drizzle all of the juices onto the plate with the steak.
Heat vegetable oil in the bottom of a non-stick pan. Add enough so that the eggs will sit on top of the pan, but not drown. You do not want the oil to bee too hot, only like medium low.
I did only 1 egg at a time, Ree is a pro and could do 3 at a time, maybe after a little practice! Add the egg to the pan.
Use a spoon to drizzle the hot oil onto the white of the egg until it is no longer cloudy.
Then drizzle only 2-4 spoonfulls of oil onto the yolk, you do not want it to become cloudy.
Remove from the pan and set on to a paper towel to drain the oil. Then place on the plate and repeat with the remaining eggs.
They look fake if you do them correctly!
I served this for dinner with a twice baked potato and homemade roll! It was sooooo yummy!
