Baked Polenta with sausage and artichoke hearts

I am loving the Bachelorette this season. I was excited for Emily to be on it, but I had no idea that she would be so real! I hope she finds love this time.

I thought this dish looked yummy and beautiful! If you like polenta, you will love this dish!

Baked Polenta with Sausage and Artichoke Hearts
2 tsp olive oil
1/2 onion
2.5 links Italian sausage
2 garlic cloves
1/4 cup marinated artichoke hearts
salt and pepper
1 tube prepared polenta
1/2 cup chicken broth
1/4 cup fresh chopped parsley
Preheat oven to 400.
 Thinly slice onion, mince garlic.
 Heat oil in a pan, add onions and cook until tender, then add garlic and cook for 1 more minute. (I forgot and added the garlic to the pan with the onions, oops!)
 Add sausage to pan and crumble while cooking.
 Once sausage is cooked, remove pan from heat.
 Chop artichoke hearts, slice polenta into 1/4 inch rounds.
 Stir in artichokes and salt and pepper.

 Spray a baking pan with PAM. Layer in the pan 2 polenta rounds and a spoonful of sausage mix.

 Pour chicken broth into pan.
 Bake for 20-25 minutes.
  Remove from oven and sprinkle with chopped parsley.
