Chicken Stuffed with Goat Cheese and Pepperocini

My DVR is full so I am trying to catch up on some shows before we leave town. All the finales are this week so I can't chance my DVR getting full! I am so looking forward to our trip tomorrow! I will be documenting and will have a lot to catch up up on when I get back!

J loves chicken and he also loves pepperocini peppers so I knew he would love this dinner. It is fun and pretty too!

Chicken Stuffed with Goat Cheese and Pepperocini
4 Chicken tenders
2 ounces of goat cheese
2 Tbsp finely chopped pepperoncini
1 tsp finely chopped fresh thyme leaves
1/2 cup plain bread crumbs
1/2 cup oil
salt and pepper


Use a fork to smooth goat cheese.
Add pepperonicini, thyme, salt and pepper.
Pound meat to uniform thickness of 1/4 inch.

Make a work station of chicken, goat cheese mix, and bread crumbs. Oh you will also need some skewers or toothpicks.
Spread 1-2 Tbsp of goat cheese mix along the chicken. Roll up chicken tenders, close the chicken with skewers, dredge chicken bundles in the bread crumbs and set aside.
Preheat oven to 425. Heat oil in skillet. Add the chicken and cook until browned on each side.

Remove and place in a baking dish.
Bake for 18 minutes or until the chicken is done through.
