We just had our weekly Sunday breakfast (peek-a-boo eggs), and about to get ready for church. I have a day full of cleaning and grocery shopping shopping when I get home, so I am glad to enjoy my Sunday morning. I hope you have a fabulous holiday weekend. Here is a salad you could bring to your potluck BBQ or you could make my staple BBQ side dish, Cantaloupe and Tomato salad, people go crazy for it!
Scallion Orange Salad
1 1/2 orange
lettuce - I used butter lettuce
2 Tbsp chopped cilantro
1 Tbsp olive oil
1/2 Tbsp balsamic vinegar
1/4 tsp kosher salt
1/4 tsp ground black pepper
1/4 cup feta cheese
Stir together juice of 1/2 orange, olive oil, balsamic vinegar, salt and pepper.
Slice shallots thin, cut oranges into segments.
Mix oranges and shallots into dressing and allow it to sit and marry for about 10 minutes.
Toss lettuce with cilantro.
Toss lettuce, feta and dressing together.
