Italian Rice Balls

It looks like a boring weekend for us ahead.... I hope we can at least see a movie. I want to see Rock of Ages, since we saw the play while we were in NYC. I hope you have a fun weekend planned! 

One of our favorite restaurants in town it called Little Dom's. They have incredible rice balls on their menu. I think mine turned out all right, they look beautiful! Next time I am going to leave out the prroscuitto and add cream and more cheese to the rice to make it creamier....YUM!

Italian Rice Balls
2 cups arborio rices, slightly cooked
2 eggs
1/4 cup grated Romano cheese
2 ounces proscuitto
1/8 tsp dried oregano
1/4 tsp pepper
4 ounces fresh mozzarella, cubed
1/2 cup fried seasoned bread crumbs
1 cups oil
Grate cheese, mince prosciuto.
Cook arborio rice until slightly underdone.
Stir together 1 egg, Romano, prosciutoo, salt, oregano and pepper.
Stir in rice.
Cube mozzarella. Beat 1 egg in a bowl for an egg wash. Place bread crumbs in a shallow dish.
Roll rice mixture into a ball and insert a cube of mozzarella into the center. 

Dip into egg wash,
Roll in bread crumbs.

Heat oil then fry for about 2 minutes on each side.

Remove and drain on paper towel, sprinkle with a little salt.
Serve with marinara sauce.
