Pineapple Habanero Salsa

I have been using Pineapple a lot lately! California really has an amazing selection of fruit and I have a new found love of this one. It is so sweet and juicy! J loves to snack. He is always in a mad search for something to snack on, even if dinner will be ready in 15 mins! I am not a snacker so I don't understand this and have a hard time finding healthy snacks for him. He really loves chips and salsa, so I wanted to try this recipe. It was delicious, but REALLY hot! If you don't like a lot of spice, cut down on the habanero, those little buggers have a kick!

Pineapple Habanero Salsa
2 cups of pineapple chunks
1/2 onion
juice of 1 lime
1/2 cup cilantro
1/2 - 1 habanero chili pepper (I used a whole pepper and it was SUPER spicy, so next time I will use 1/2)
1/2 cup of water
1/2 tsp kosher salt
Chop pineapple into cubes. Remove seeds from habanero.
Place all ingredients in a food processor and blend until smooth.

Enjoy with some tortilla chips.
