A couple of weeks ago I spent the whole day with my bestie, Meg and her sweet little girl Sarah. Meg loves my sour cream chicken recipe and she invited me for dinner that night. We were making dinner and realized there was not any crackers! Suddenly it became a Chopped moment and together we created a yummy new chicken dish that I have made several times now.
4-6 chicken tenders
1/2 cup sour cream
1 cup tortilla chips, crushed
1/2 cup grated Monterey Jack Cheese
1/2 tsp garlic powder
1/2 tsp chili powder
1/4 tsp salt
Preheat oven to 375
Grate cheese and mix with torilla chips.
Mix garlic powder and chili powder into topping.
I was lazy this day so I dumped the chicken and sour cream in a bag to coat the chicken. I think it works better if you put the sour cream in a bowl and then dip the chicken into it.
Place chicken covered in sour cream in a baking dish. Top with chip and cheese mixture.
Bake for 25 minutes.
Serve topped with some fresh cilantro!
