Chilled Cucumber Soup

I have so much blogging to catch up on! There are 13 drafts in my blogger. There are so many yummy recipes, I look forward to sharing with you. For now here is an easy recipe for this hot, hot day! Turning on the oven is not ideal, so I made this soup for lunch yesterday. Enjoy!!

Chilled Cucumber Soup
1 cup of water
1/2 cup sour cream
1/2 cup greek yogurt
1/2 cup fresh mint
1/2 cup fresh basil leaves
1 hot house cucumber
1/4 cup green onions
1 Tbsp lemon juice
1/2 tsp hot sauce
salt
1/4 cup feta
Peel and chop cucumber into pieces. Save a few discs for topping
Puree in a blender water, sour cream, yogurt, cucumber, basil, mint and green onions.


Stir in lemon juice and hot sauce.
Season with kosher salt to taste.
Chill soup for 2 hours before serving. Top with feta and sliced cucumbers.
