It is birthday weekend! I am so happy to share my birthday weekend with some of my dear friends: Brook (the 17th) and my friend Megan (the 20th). Mine is sandwiched in the middle on the 18th. Brook and I celebrated on Monday with a pizza lunch and pinkberry, (pizza is both of our favorite foods!) Saturday Megan, Em and I will have a 3Bs reunion and celebrate with a progressive dinner in Pasadena! For those of you who don't know what a progressive meal is, we will be dining in a different place for cocktails, appetizer, meal, and dessert! I will document with photos along the way and will post more about it soon! I hope you have a great weekend.
This pasta really surprised me! It was so easy, and required little cooking, which is perfect for an un-air conditioned apartment in 95 degree weather! I think it could become a staple carb for our dinners.
Dijon Dill Pasta Salad
2 Tbsp dijon mustard
2 Tbsp olive oil
1 Tbsp apple cider vinegar
2 Tbsp lemon juice
1 Tbsp grated parmesan cheese
1 tsp fresh chopped dill
1 clove garlic, minced
3 Tbsp minced sweet white onion
1/4 cup cucumber, peeled and chopped
1/4 cup crumbled feta cheese
salt and pepper
(I don't know why, but I thought white wine was needed for this recipe. Disregard it in the picture, unless you want to pour yourself a glass while you cook!)
Chop onion, cucumber and garlic. I didn't use fresh garlic, I used pre-chopped.
Mix together the mustard, oil, dill, parmesan and garlic. Season with salt and pepper.
Stir in onion, feta and cucumber.
Cook pasta according to al dente. Drain.
Stir pasta into sauce. Chill until ready to serve.
