Pots de Creme

I am really behind on posting. I am moving this one to the top of the list because so many people have asked for this recipe, it is delicious! I had my preview party for my the Fall '12 CAbi collection last Saturday. It was dessert themed, but I threw some salty snacks in to balance the sweet.

Pots de Creme
This recipe is from Pioneer Woman. I cut the recipe in half and put it in my fav mini parfait glasses. Is is incredibly easy and delicious. 

6 oz semi sweet chocolate chips
2 eggs
1/2 cup strong hot coffee
1 tsp vanilla extract
1 pinch of salt
1 Tbsp sugar
optional: 1/2 cup whipping cream, plus 1 Tbsp sugar for homemade whip cream
Place in the blender chocolate chips, eggs, vanilla, sugar and salt.
Pulse a few times to mix.
Turn blender on low and slowly drizzle in hot coffee. I had to cover the hole with my hand so it would not splatter out.
Blend until it is smooth.

Pour into dishes.
Place in the fridge for at least 2 hours.
For whip cream, cold whip cream and sugar until stiff peaks form.

I put the whip cream into a plastic bag to pipe into the glasses.
And I sprinkled the top with a little cocoa powder.
SOOOOOO GOOD! You will not believe!
