Here is my new favorite crockpot recipe! It is the perfect fall dish, especially when served over mashed potatoes, delicious!
Coffee Chipotle Short Ribs
1 cup strong brewed coffee
1 yellow onion
4 chipotle peppers
4 garlic cloves
2 Tbsp. honey
2 Tbsp. olive oil
1 Tbsp. lime juice
1/2 cup beef broth
Blend coffee, oil, honey, chilies, lime, salt and pepper.
Coarsely slice onion.
Place onion slices in the bottom on the crock pot. Pour in broth (I didn't have beef so I used chicken broth.)
Place short ribs on top of onion. (I assembled mine the night before so my meat was frozen).
Pour sauce over meat.
Cover crock pot and cook on low for 8 hours.
Skim fat off the top of the sauce.
Serve short ribs with sauce drizzled over it. I also made mashed potatoes to go with them, yummy!
