Jalapeno Cheddar Chicken

Happy 3rd anniversary to my sweet husband! I love you more and more each day, you are the man of my dreams! 

It is also my anniversary of being a Californian, it has been an adventurous 3 years! Between this blog, my 3Bs, Junior League, Operation School Bell, Dream Dinners, BSF, and CAbi, I have made a wonderful life for myself here. We are blessed!

Jalapeno Cheddar Chicken
I found this recipe on Two Peas and Their Pod. J loves chicken so I went for it! If we had a grill, it would have worked out a little better, but it still tasted good.
Marinate:
1/2 cup lime juice
zest of 1 lime
2 Tbsp. of cilantro
1/2 tsp salt
1/4 tsp pepper
1 Tbsp sugar
4-5 chicken tenders

For the rest:
1 cup fresh grated sharp cheddar cheese
1 jalapeno, chopped and seeded
2 Tbsp. chopped cilantro
1 tsp olive oil
Zest you lime.
Juice your limes. PS...in case you forget, always zest before you juice, doing it backwards is really hard work!
Stir together marinate ingredients.
Place marinate and chicken in a bag for at least 1 hour.
Dice your jalapenos.
Remove chicken from bag. Carefully slice a slit between the chicken tenders (or breasts), to create a pocket.


Stuff each chicken tender with some cilantro, diced jalapenos and cheese.


I used toothpicks to secure the pockets together.
If you have a grill, brush olive oil on the grates. If you are using a grill pan, brush olive oil on the pan.
Grill chicken for 6-8 minutes per side, or until done.
The cheese will ooze out, but that is ok! I like the crisp cheesy bits.
Now for the fun part, which doesn't work so well with a grill pan. Pile the extra cheese on top and close the lid of your grill to allow it to melt for a few minutes. If you have a grill pan, it will slightly soften, maybe melt a little...just pretend it is melted ok?

Sprinkle a little fresh cilantro over the top and enjoy!
