Pumpkin Muffins with Pecan Streusel

We had beautiful, cool, fall weather yesterday and it was devine!!! I laid on out chaise lounge listening and smelling the rain. I am happy for the fall to finally be here I had to give you a fall recipe!

Pumpkin Muffins with Pecan Streusel
For muffins:
1 1/2 cups flour
1 tsp baking powder
1 cup canned pumpkin
1/2 tsp vanilla
1/3 cup vegetable oil
2 eggs
1 tsp pumpkin pie spice
1 1/4 cup sugar
1/2 tsp baking soda
1/2 tsp salt

For Streusel:
1/4 cup flour
2 1/2 Tbsp  brown sugar
1/8 tsp pumpkin pie spice
2 Tbsp pecans, finely chopped
1 1/2 Tbsp butter
Sift together flour and baking powder.
In your electric mixer combine sugar, vanilla, oil, pumpkin, eggs, pie spice, baking soda and salt.
Slowly stir in the flour.

Use a pastry blender to blend streusel ingredients into a crumble topping.
Line a muffin pan with liners. Fill each muffin with about 1/3 cup of batter. I made 24 muffins.
Top each muffin with almost a Tbsp. of streusel. 
Bake on 350 for 20 minutes.
Allow to cool for a few minutes and then serve with some hot coffee, YUM!
