Cilantro Lime Rice

I am finalizing my thanksgiving menu and grocery list today! I am so excited to cook my first Thanksgiving. My only concern is cooking in my closet sized kitchen. I will keep you updated!

I LOVE this rice. I have made it several times now. Thank you Ree Drummond!

Cilantro Lime Rice
1 Tbsp olive oil
1-2 cloves of garlic, minced
1 cup white rice
2 cups of chicken broth
juice and zest of 1 1/2 limes
1/2 cup fresh cilantro, chopped

Add juice to chicken broth.
Heat oil in saucepan, add garlic and saute until toasted.
Add rice to pan. Saute for 2 minutes, stirring constantly.
Add broth, juice and zest to the rice. Cover and simmer for 10-15 minutes.
Chop cilantro.
Once rice is cooked through, remove from heat and stir in cilantro.
Enjoy with some yummy enchiladas!!
