Baking Day Part 2: White Chocolate Peppermint Popcorn

White Chocolate Peppermint Popcorn
Popcorn kernels
canola oil
butter
kosher salt
white chocolate
red candy melts
peppermints (or candy canes)
First pop popcorn. A LOT of popcorn... Pour oil in a pan to just cover the bottom of the pan. Turn the heat on and add 1-2 kernels. Melt 1 Tbsp spoon of butter. Once kernels pop, the oil is ready. Pour butter and kernels (enough to cover just bottom of the pan) and cover the pot. Turn down heat to medium. Wait until you hear the kernels slow down, remove from heat. Pour kernels into a large bowl, toss with some kosher salt. Then pour onto a flat surface. Continue to make batched until you have all that you need. I made that whole container of popcorn up there, can you tell??

Crush the peppermints in a gallon bag. I used a hammer.

Get them as small as possible.
Melt white chocolate.
and red chocolate.
Carefully drizzle both chocolates over the popcorn. Make sure the popcorn is in a single layer.
Emily did such a good job. She kinda reminds me of Mrs. Claus is this photo.

You want to make sure the popcorn completely dries.

Sarah came home just in time to be our guinea pig. I think she liked it! By the way...This photo was so work all the time and money it took to save these photos. Isn't she adorable! She just turned 2 this week!

We stopped the snacking with her birthday present from Aunt Sheliba!

At the moment her favorite Disney Princess is Belle, even though she had not seen the movie..Now she has it and I have been informed it is on constant replay at the Lewis household.
And a little Belle doll to go with it.

Time to pack up all the popcorn....We put most of it in sandwich bags.
The rest went in these cute treat bags that I gave to my co-workers.
