This side dish was extremely delicious! I was soooo pleased and cannot wait to make it again soon!
1 head of cauliflower - I like to buy the pre-chopped bag from Trader Joes
6 Tbsp. butter
2 Tbsp. lemon juice
2 Tbsp. Dijon Mustard
1 1/2 tsp lemon zest
1 Tbsp. chopped parsley
Preheat oven to 400. Chop cauliflower in florets. Place on a greased baking sheet and sprinkle with kosher salt. Roast in oven for 15 minutes.
Juice ans zest lemon.
Melt butter in saucepan.
Stir in lemon juice, zest and mustard.
Heat through and remove from heat.
Remove from oven.
Spoon butter sauce over the cauliflower.
Place back in oven for 10 more minutes.
Chop parsley and sprinkle over roasted cauliflower.
