Pistachio Cookies

We are leaving for Texas today! I can't wait for all the fun festivities to begin. I hope your holidays are joyful! I am trying to post the rest of the Baking day post before Christmas. Here is part 3 of 4. Yummy Yummy Pistachio cookies!

Meg is making her traditional egg nog cupcakes. Add some Sherry to the batter, then take a swig, that is her motto!
Yummmm the batter is tasty!
Her grandma gave her this apron just for baking day. It says "Sorry Santa, naughty just feels so nice."

Pistachio Cookies

2 sticks of butter
1 cup powdered sugar
2 tsp vanilla extract
1 3/4 cup flour
1 3.4oz package of pistachio pudding mix
1/2 tsp salt
Cream butter. Add 1/2 cup of the sugar and beat until fluffy. Stir in vanilla extract.
Stir together flour, pudding mix and salt.
Slowly stir dry ingredients into butter mix.
Divide dough in half. Form into a ball. Wrap in saran wrap and place in the fridge for about 1 hour.

After eating the popcorn Sarah moved onto the eggnog cupcakes.

Remove chilled dough from the fridge and preheat oven to 350. Line baking sheet with parchment paper. Roll dough into teaspoon size balls. Place on baking sheet and pressdown slightly.

Bake for 9-10 minutes. Remove from oven and allow the cookies to sit on the baking sheet for about 5 minutes. 
Remove warm cookies from the baking sheet and roll in the remaining powdered sugar. Place on a cooling rack.
