Green Bean Bundles

We are home after a long stay in Texas! It was a lovely time, even though Jeffrey was fighting the flu. I (thankfully) never got it! Here are some fun pictures from our Christmas in Odessa with my family.

Here is a good recipe for you to start off the new year.

Green Bean Bundles
Fresh Green Beans, trimmed at both ends
1/2 lemon
salt and pepper

Preheat oven to 350.
If you like symmetry you can trim your green beans to be the same size.
Place green beans in a large bowl. Squeeze 1/2 lemon into bowl with salt and pepper, Toss to coat.

Cut bacon slices into about 3 pieces. Wrap about 5 green beans with bacon.
Place bundles, seam down, on a greased baking sheet.

Bake for 20 minutes or until bacon is crispy.
