Here is what has been going on with me: I had my CAbi preview party and it was a success, I will post on that later. My hubby is gone for a month and I am super sad. I have had terrible sinus resulting in a migraine the past 2 days. I am excited for my Texas trip this weekend! I get to see my Mommasita, aunties, cuzins Timbo & Mellie and my bestie KW!
I found this potato dish on Pinterest from one of my fav bloggers Pink Parsley. I was SO easy to make and super tasty. I have already made it twice.
Goat Cheese Au Gratin
2-3 yukon gold potatoes
1/2 cup milk
1/2 cup heavy cream
1-2 cloves of garlic, minced
1/2 cup crumbled goat cheese
1/4 cup grated parmesan cheese
salt and pepper
fresh chopped chives for garnish
Preheat oven to 400.
Thinly slice potatoes, I used my new hand held mandolin.
Whisk together milk, cream, goat cheese, parmesan, salt, pepper and nutmeg.
Grease a baking dish. Line the bottom of the dish with 1/3rd of the potatoes.
Pour 1/3rd of the cream and cheese mixture over the potatoes. Repeat 2 more times.
Place in the oven for 1 hour and 15 minutes.
Serve with chopped chives.
