Potato Chip Fried Fish

I am Texas bound in the morning! I am ready for some good Mexican food. 
The batter for this fish recipe resulted in an extra crispy fish filet. I really liked it and I think you will too! Happy weekend to you!

Potato Chip Fried Fish
1 bag salt and vinegar chips (I totally thought I bought salt and vinegar but bought plain, it works either way but next time I am buying salt and vinegar!)
1/3 cup flour
pinch cayenne pepper
pinch salt
2 eggs
2 Tbsp sour cream (not shown)
2 fish filets
canola oil for frying (about 3/4 cup)
lemon wedges for serving

Crush potato chips in a food processor.
In a shallow dish, mix together flour, salt, and cayenne
Whisk together eggs and sour cream.

Heat oil in frying pan.
Dip fish in dry ingredients, then in eggs, then back into dry ingredients.
Place fish in hot oil and cook for 5-8 minutes per side.
Remove and drain on paper towels.
Serve with lemon wedges, ketchup, and or vinegar!
