Roasted Summer Squash with Goat Cheese

I am home! But only for 2 days until we leave for Philly on Friday! It was a great trip back home but it was no vacation. I was working everyday. I did several CAbi parties, personal CAbi appointments and closet appointments. I even had an appointment with Miss Teen Brownfield (Maddie Matlock), for her hair and makeup trial run for the Miss Teen Texas Pageant in July. Yes, that is right, I have been hired to do hair and makeup for the Miss Teen Texas Pageant and I am thrilled! I am very familiar with the pageant as we would go every year to see Maddie's Aunt Morgan who won the title Miss Texas in 2005. It is a dream come true job for me, YEAH! Maddie is beautiful and will do very well.
I didn't take many pictures while I was home. Here is a picture of the beautiful tablescape from one of the CAbi parties. Heather you are the hostess with the mostess.

I LOVE Summer squash. It tastes really really good with goat cheese. Enjoy!

Roasted Summer Squash with Goat Cheese
 2 yellow summer squash
1/2 Tsp chopped rosemary
1 Tbsp olive oil
1/8 tsp garlic powder
salt and pepper to taste
1/4 cup crumbled goat cheese

Preheat oven to 400.
 Slice squash into 1/4 inch rounds. Chop rosemary. 
 In a mixing bowl combine squash with rosemary, garlic powder, olive oil, salt and pepper. Stir until seasonings are even distributed.
 Spread squash on a greased baking sheet, in a single layer.
 Roast for 12-15 minutes.
Remove from oven and transfer to a serving platter.
 Top with crumbled goat cheese.
 Serve immediately.
