Bacon Roasted Peaches over Vanilla Ice Cream

Whoa, I just woke up from a 1 1/2 hour nap, or should I say Coma! My dream was so strange, there were even some high school friends there and I could not wake myself up! Now if I could get myself out of this cloud and get on with my day...

Here is a recipe some of my Instagram followers have been waiting for! I have had this recipe posted on my Pinterest for 2 years, but never got around to it! I can't wait to make it for my 3Bs, they will love it!

Bacon Roasted Peached over Vanilla Ice Cream
4 slices bacon
3-4 ripe peaches
1 Tbsp white sugar
1 Tbsp brown sugar
1/4 tsp kosher salt
1/8 tsp pepper
4 springs fresh rosemary
vanilla ice cream
preheat oven to 450
Mix together the 2 sugars.
Cut peaches in half and remove the seeds. Sprinkle some of the sugar on the flesh side of the peaches.
In a heavy cast iron skillet, fry bacon until crispy, remove and set aside.
Season fresh side of peaches with salt and pepper.

Drain most of the bacon grease from pan, leaving only a thin layer. Save bacon grease for later.
Heat cast iron skillet on medium high. Place peaches fresh side down onto heated skillet. Set rosemary sprigs around peaches.
Cook for 5 minutes, until golden.
Sprinkle remaining sugar over tops of uncooked side of the peaches.
Drizzle with a couple of tsps of the reserved bacon grease.

Cover with foil and place in the oven for 10 minutes.
Remove from the oven and turn peaches over.
Recover with foil and place in the oven for 5-10 more minutes.
They are ready to serve however you like them! I prefer to serve with ice cream. Or you could sprinkle with crumbled blue cheese and go with the savory flavors.
I crumbled the bacon over the icecream too, YUM!
