Grilled Chicken with Cilantro Lime Butter

I hope you had a fun weekend! I was so happy yesterday because I was able to get my hubby to take a day off! He never does that, and it was much needed. We even went on a lunch date. I appreciate that is a such a hard worker, but sometimes I need him all to myself!

This is one of my new favorite chicken dishes, and it is so easy! If only I had a real grill..... A girl can dream right? If you have a real grill, don't take it for granted and make this dinner!

Grilled Chicken with Cilantro Lime Butter

2 Tbsp butter, softened
1 tsp lime zest
2 Tbsp finely chopped cilantro
1/4 tsp Green Tabasco
1/4 tsp kosher salt
4 chicken tenders or 2 chicken breasts
2 Tbsp fresh lemon juice
1 Tbsp olive oil
Zest lime, chop cilantro.
Stir together butter, lime zest, cilantro and salt.
Place butter on a sheet of plastic wrap.
Twist the edges together until it becomes a cylinder. Place in the fridge for a few minutes to harden.
If you are using chicken breasts, butterfly them. If you are using chicken tenders, pound with a meat mallet until very thin.
Place chicken in a shallow dish or plate. Drizzle with lime juice and olive oil. Season with salt and pepper. 
Allow chicken to sit and marinate for at least 10 minutes.
Heat grill pan or grill until very hot. Drain chicken from marinate and cook for about 5 minutes per side.
Remove butter from fridge and cut a pat for each piece of chicken.


Plate chicken and immediately top with pats of butter. I served with my cilantro lime rice, so yummy!
