Radish and Avocado Salad

Let me start by saying, I know most of you may think this is weird, but I have to write a bit about Kidd Kraddick. For those of you who don't know, Kidd Kraddick is a radio personality from Dallas, Texas. He passed away suddenly on Saturday and it has devastated me as well as many others who were his listeners across the country. I listened to the Kidd Kraddick show when I lived in Fort Worth. It especially helped me when I lived with my aunt for a short time and I would drive from Flowermound to Fort Worth everyday. When I moved to LA I really missed the show and thought about it often. Late, last year my sister told me about their podcast so I started downloading it and listening during my long drives home in LA traffic. I fall asleep SOOO easily when driving and it was the only thing that kept me up! I also found the show extremely entertaining and hilarious. So that being said, when I found out that Kidd had died, I was heartbroken. "How will the show go on without Kidd?" "How are the other members of the cast doing?" and most selfishly "How am I going to stay awake when driving home everyday?" I never knew I would be so effected by a celebrity's death, but I really feel like I have lost a close friend. Here is to Kidd, his legacy will live on!

This may surprise you but I am not a huge salad person. I LOVE a good side salad, but salad as my main meal is never matter how much chicken or protein you add. I usually get tired of the lettuce before I fill up. SOO when I find a fun side salad to share with you, I am happy. Here is a lovely one that is easy and fresh for summer. 

Radish and Avocado Salad

1/4 cup thinly sliced red onion
2 Tbsp sour cream
juice of 1 lime
1/2 tsp hot sauce
2 avocados
4 radishes
3 Tbsp feta cheese
1 Tbsp chopped cilantro
Mix together sour cream, hot sauce, and lime juice.

Thinly slice radishes, Slice avocados and red onions.
Place sliced red onions in cold water and allow them to sit for 10 minutes to make them more mild.
On a serving tray, layer avocados, radishes and drained red onions.
Drizzle with the sour cream/lime dressing.
Top with crumbled feta cheese and chopped cilantro.
This salad is so fresh for summer! I hope you enjoy it as much as I did.
