Truffle Cream Sauce

I have been busy this week getting ready for my new Fall season at CAbi! I am starting my 3rd season, which means I am not on "freshman" status anymore! I can't wait to go to Portland next week and get better acquainted with the clothes. If you are one of my CAbi girl's, I hope you are getting ready for some new cute clothes!!

Truffle Cream Sauce
1 cup chicken broth
1/2 onion, quartered
2 garlic cloves, smashed
1/2 cup white wine
1/2 cup heavy cream
1 tsp corn starch
1 tsp truffle oil
salt and pepper
parsley for garnish

For chicken recipe use the Chicken Milanese recipe here. 
Use this risotto recipe.

Place quartered onion and smashed garlic cloves in sauce pan with cup of chicken broth. Bring to boil and reduce by half.
Add wine and reduce again by half.
Remove onion and garlic, discard.
Add cream and cornstarch and simmer until thickened.

Season with salt and pepper.
Drizzle in truffle oil and remove from heat.

Cook chicken and risotto according to recipes listed above. 


Plate with risotto on the bottom, topped with chicken and drizzled with truffle cream sauce.
