Sesame Chicken Thighs with Salad

I am SOOO ready for September so all of my TV shows will start back. As of now I only have TV to watch on Sundays and Tuesdays. It is getting really boring around here, haha! Yesterday was fun as I spent some time with this cutie! Megan is doing a Queen Ester camp this week so I volunteered to keep Sarah for the day. We went to a beautiful park in Pasadena that had a rose garden. I get to keep Sarah again next week, yay! She loves being with her Aunt Shelbi.

 I love that her dress and her bow matched the roses!

Sesame Chicken Thighs with Salad
1 Tbsp toasted Sesame Seeds
1 Tbsp Lemon zest
2 tsp dried thyme
1/2 tsp sugar
salt and pepper
4 skin-on boneless chicken thighs
1 Tbsp lemon juice
2 Tbsp red wine vinegar
2 Tbsp olive oil
2 cups lettuce
11/4 cucumber
1/2 tomato
1/2 cup plain pita chips, crushed

Turn your broiler on high.

In a food processor, blend sesame seeds, thyme, lemon zest, sugar, 1/2 tsp salt and 1/4 tsp pepper. Pulse until slightly crushed.
Mix together 1 Tbsp. of the rub, the lemon juice, vinegar and salt and pepper. Whisk in olive oil. Set aside.
Use remaining seasonings to rub on both sides of the chicken.
Chop cucumber and tomatoes. Toss with lettuce and crushed pita chips.
Broil chicken for 8 minutes per side.

Remove chicken from pan and set aside. pour drippings into salad dressing.
Serve salad and sesame chicken. Drizzle dressing over salad and chicken.
