Today was one of my favorite days of the year, 3Bs baking day! It is the day that we 3Bs get together to make Christmas treats for our friends and family! It is always a special treat and this year we held it at my house! Meg and I started off the day while Em was at work, but she joined us just in time to help pack the boxes. We made some classics from past years, Peppermint Popcorn and Toffee Cracker Cookies. We made some new treats, Thin Mints, Cinnamon Pretzels and Soft Gingersnaps with White Chocolate. I can't wait to deliver these goodies!
Homemade Christmas Thin Mints
2 Tsp peppermint extract
2 bags semi-sweet Chocolate Chips
Use a butter knife to scrape the filling off of the oreos.
It is really sad to throw out this mound of yummy filling! Do you know of a recipe we can make with Oreo cream? We were going to try to find one, but then half way through the day we were overwhelmed with sweets and were ready the throw it away.
Heat 1 bag of semi-sweet chips in 30 second increments, stirring between, until it is smooth and glossy. Stir in 1 tsp of peppermint extract.
Use 2 forks to dunk the cookies in the chocolate, then the covered cookie on one fork and quickly shake the fork from right to left to even out the tops of the chocolate and remove the access.
After this batch of chocolate is spent, repeat with the second bag of chocolate. We used 4 bags of chocolate and 2 boxes of Oreos to make all the cookies we needed.
Place on wax paper to dry, sprinkle while still damp. These will take some time to dry or you can place them in the fridge to quicken the process.
