Garlic and Ginger Sauteed Bok Choy

Happy Memorial Day! My hubby is back from his work trip and we are enjoying our day off. I hope to hit up some sales today and look for some more goodies for our house! Last week we bought a few outdoor decorations, I am loving our new plants and red umbrella. I am a beginner at gardening, we will wait a few weeks to determine if I have a green thumb...

I had never made Bok Choy before, but it came in my farmer's box a few week's ago. I found it to be nice and mild, a good balance between lettuce and cabbage. Plus it looks really pretty!

Garlic and Ginger Sautéed Bok Choy

4 baby bok choy
3 Tbsps coconut oil
3 garlic cloves
1 Tbsp ginger
1 Tbsp brown Sugar
2 Tbsp chicken broth
1 Tbsp rice vinegar
2 tsp sesame oil
2 Tbsps soy sauce
2 tsp sesame seeds
 Mix together chicken broth, sesame oil, soy sauce, and rice vinegar.
 Slice Bok Choy down the middle.
 Heat 2 Tbsp of coconut oil in a saute pan.
 Cook bok choy in the pan cut side down until browned. Turn and cook for a few mins on the other side.

 Remove Bok Choy from the pan and set aside.
Add another 1 Tbsp of coconut oil to the pan and saute chopped garlic and chopped ginger in the pan. Cook for 1 minute. Then add the sauce to the pan.
Add sauce to simmer and thicken for 2-3 minutes.
 Add Boy Choy to sauce and cook for 1 minute on each side.
Remove from pan and serve immediately, sprinkled with sesame seeds.

Cuban Grilled Pork Chops

Here are some fun photos with my 3Bs! I went with Meg on her first grocery store run with 2 kids on Tuesday, then we headed back to the house, Em came over and we made dinner and watched Pitch Perfect! It was a very fun night.

 This was last Saturday. We went to Laguna for lunch to celebrate Em's birthday!

I have never been much of a pork chop person. These were delicious! Have I mentioned lately that I LOVE my grill?!

Cuban Grilled Pork Chops
2-4 thickly sliced pork chops

1/4 cup orange juice
juice of 1 lime
1 Tbsp canola oil
1/2 Tbsp white wine vinegar
2 garlic cloves, minced
1 Tbsp cilantro, chopped
1/4 tsp dried oregano
1/2 tsp cumin
1/2 tsp smoked paprika
1 pinch of salt and pepper

Citrus Vinaigrette:
1 Tbsp olive oil
1 Tbsp white wine vinegar
1 tsp yellow mustard
2 Tbsp orange juice
1/2 lime juiced
1 Tbsp chopped cilantro
1/2 tsp dried oregano
pinch of salt and pepper

Blend together all the marinate ingredients.

Add marinate to pork chops and allow it to marinate for 1-2 hours.
Blend together the ingredients of the dressing, except for the oil. Then add the oil while blending.
Set dressing in refrigerator until ready to use.
Grill pork chops for 3-4 minutes per side.

Serve pork chops topped with citrus vinaigrette.

Black Bean Turkey Burgers with Avocado Mayo

I am so in love with my grill! I have been making a lot of really great recipes lately! Jeffrey and I both LOVED this one. I was inspired by a recipe I saw on Pinterest and it was delicious! I hope you will enjoy them at your next BBQ!

Black Bean Turkey Burgers with Avocado Mayo

Black Bean Burger: (this recipe make 4-6 burgers depending on size, I halved it and made 3)
1 pound of lean ground turkey
1 tsp dried onion flakes
1 tsp salt
1/2 tsp black pepper
1/2 tsp taco seasoning
1/2 tsp cumin
1/2 tsp corriander
1 jalepeno
1/4 cup chopped cilantro
1 can black beans, drained and rinsed
Sliced provolone cheese
Hamburger buns, or if you can find them, pretzel buns!

Avocado Mayonaise
1 avacado
1/4 cup mayonaise
juice of 1/2 lime
pinch of salt
1 Tbsp cilantro
Seed the jalepeno and chop very fine.
Mix together spices, black beans, jalepeno and cilantro.
 Mix ground turkey into black bean mix.
 Form into patties.

 Blend together the mayo, avocado, lime, cilantro and salt. 
 If your avocado isn't ripe you may need to stop and scrape the sides, blending between until smooth.
 Set mayo in the fridge until ready to use.

Grill burgers for 4-5 minutes per side.

 1 minute before the patties are done, place 1 slice of provolone cheese on each patty and allow it to melt before removing from heat.
 Toast your buns and spread with mayo on each side.
 Serve with some yummy Chili Lime Potato Wedges!

Chili Lime Roasted Potatoes

The past few weeks have been so fun as a movie my husband assistant directed 1 1/2 years ago was released with wide press and high praises. It is called Palo Alto and was directed by Gia Coppola and Emma Roberts and James Franco starred in it. The Today Show last week interviewed Gia and James and then later Hoda and Kathy Lee interviewed Gia and the male lead, Jack Kilmer (Val's son). During both interviews they showed a picture of the movie set and Jeffrey is right in the middle!  Here is the link to the clip:

Then we went to the Arc Light to see it and, it was great! I took pictures of Jeffrey's name as it scrolled on the credits!

I have been making these potatoes with our BBQ dinners lately. They are a perfect side dish!

Chili Lime Roasted Potatoes
4 golden potatoes, or whichever ones you would like to use (you can even use sweet potatoes!)
1 lime, zested and juiced
1/2 Tbsp kosher salt
1 Tbsp chili powder
1 tsp cayenne pepper
2-3 Tbsp olive oil
Preheat oven to 425
 Zest Lime.
 Mix lime zest with kosher salt.
 Slice potatoes whichever way you would like. You can make them wedges or fries or chips..
 Mix potatoes with kosher salt and lime zest.
 Add chili powder and cayenne pepper. Slowly drizzle in olive oil as you are tossing.

 Spread potatoes onto a greased baking sheet. Then juice the lime right over the potatoes. Shake the pan to ensure all the potatoes get evenly juiced.
 Bake for 12 minutes, then remove pan from oven and turn potatoes. Place back in the oven for 5 more minutes or until crisp.
 Serve alongside your grillins!
