I was never interested in cooked leafy greens. But with all of this new focus on Kale, I decided to try it. It is something I have missed out on for so long. Try it, I know you will like it!
Garlic Pan Fried Kale
1 bunch Kale
3 Tbsp olive oil
4-5 cloves of garlic
1 Tbsp butter
1 Tbsp lemon infused oil
1/2 lemon juice
salt and pepper
Rinse and dry Kale. Strip the thick tough cores from the middle of the leaves. Then tear the leaves into smaller pieces.
Peel garlic and slice thinly.
Heat 1 Tbsp of oil in pan and cook garlic until fragrant.
Add 2 more Tbsp of oil oil to the pan and allow to heat, but do not burn garlic. Add the Kale to the pan and begin to stir around the pan. Cook for 5 minutes, stirring a couple of times a minute.
Add butter to the pan. Stir until it melts and it mixed in with the Kale.
Squeeze lemon juice and lemon oil into the pan. Season with Salt and Pepper.
Cook for a few more minutes until leaves are very tender.
