Taco Salad

We have been having some fun around here lately. It has been hot so we are grilling! I WILL be blogging about these delicious sliders soon!

This Monday I was fortunate to attend a dinner with the CAbi president and CEO! They spoke to us about all the exciting things to come with our company. I love my job and love that our leaders feel so strongly about meeting with us personally!
 Las night J and I went on a walk. It was so warm! I love our little Bungalow! I thank God everyday for bringing us this house and all of the blessings he has bestowed on us! Thank you Lord for Air Conditioning in Pasadena this summer!

Taco Salad is so delicious and easy to make. I have never thought to have it until my friend, Elizabeth made it for her CAbi party. I was like, "duh!" why have I not been making this? You can edit it however you would like by using a number of different mixins to make it your own!

Taco Salad
1/2 pound of ground turkey or ground beef
1 packet of taco seasoning
1/4 cup your favorite salsa
1/4 cup sour cream
1/2 lime, juiced
My Mixins:
1/3 cup cherry tomatoes
1/3 cup black beans, drained and rinsed
2 Tbsp choped green onions
1/4 cup shredded cheddar cheese
1/2 avocado diced
4 corn tortillas, sliced (you can use fritos, doritos or whatever chips you would like, but I like to make my own.)
Canola oil
kosher salt

Mix together salsa, sour cream, lime juice and 1/2 Tbsp taco seasoning for dressing. 
Set dressing aside.
Cook ground turkey or ground beef. Drain and then mix in 1-2 Tbsp of taco seasoning.
Fry up sliced corn tortillas in vegetable oil. 
Drain on paper towel and season with kosher salt.
Toss lettuce with all ingredients and dressing before ready to serve.
