Squash Casserole

This time of year, everyone is getting out of school, it is time for all the yummy summer treats! I love yellow squash. It is sweet and buttery, especially when you add extra butter to it, haha! Here is a great recipe for all that squash you may have growing in your backyard.

Squash Casserole
2 Tbsp butter
4 cups sliced yellow squash
1/2 onion, diced
2 eggs
1 cup grated cheddar cheese
1 cup milk
2 tbsp butter
1/4 tsp cayenne pepper
1/2 tsp salt
1/2 tsp black pepper
1 sleeve of ritz crackers
Preheat oven to 350.
Heat 2 Tbsp butter in saute pan with onions and squash. Cook until tender.
Whisk together eggs and milk.
Remove squash and onions from heat and allow to cool for a few minutes.
Add squash and onions to egg mixture. Season with cayenne, salt and pepper.
Stir in cheddar cheese.
Melt another 2 Tbsp of butter in sauce pan then add to egg mixture.
Pour squash mix into 9x13 inch pan. If you would like to prep for your party early, you can stop at this step and put it into the fridge to pull out and cook later.
Top with crushed Ritz crackers. If prepping early, do not put the crackers on until right before it goes into the oven or else they will be soggy.
I made this on a night when the 3Bs came over and we had it with our hamburgers.
