Almond Fried Chicken

Do you ever have days where you get ALOT done and others where no matter how hard you try, you can't cross anything off your list? I am luckily having the first today! Last week I experienced a terrible day where I couldn't get anything done, it really wore on me all week and kept me from accomplishing much last week. I am so glad that I was able to start fresh this week. I have also found that as long as I start my day off with my Bible Study, the rhythm of my day is better. I love BSF (Bible Study Fellowship), if you are looking for a Bible Study, please look into it, it is nationwide, it is life changing, I can't say enough! Oh and after all that rambling Happy Easter!

Ok so this dinner is incredible! Chicken nuggets, meets pecan chicken, but with almonds...It is SO good!

Almond Fried Chicken
1/2 cup almond butter
1/3 cup milk
1 Tbsp honey
4 chicken breasts or you can use chicken tenders
flour for dredging
2 cups panko bread crumbs

Mix together milk, almond butter and honey.
Line up your bowls. 1 with flour, 1 with the almond mixture, 1 with panko.
If you are using chicken breasts I recommend pounding them to a thinner even thickness so it will cook more evenly. 
First dredge the chicken in the flour.
Next dip chicken in the almond "batter."
Then cover with the panko bread crumbs.
Heat canola oil to medium high heat. Fry the chicken for 4-6 minutes per side.
Drain on paper towels, season with kosher salt.
Serve with side of spicy ketchup! Or make up some gravy! These are delicious!

Slow Cooker Sesame Honey Chicken

We finally have a grill! I have been waiting years for this moment and it is actually as exciting as I always imagined.
 My 3Bs came over last night and we made fancified burgers! They were delicious!
 So much fun with my favorite girls!

Here is another great slow cooker recipe for you!
Slow Cooker Sesame Honey Chicken
1 pound Chicken Thighs
3/4 cup honey
1/2 cup soy sauce
1/4 cups, plus 2 Tbsp ketchup
1 Tbsp canola oil
1 Tbsp sesame oil
1 Tbsp minced ginger
4 Cloves garlic
3/4 tsp red pepper flakes
4 tsp corn starch
1/4 cups cold water
1 tsp sesame seeds

 Mix together soy sauce, honey, ketchup, oils, ginger, garlic and red pepper flakes.
 Place chicken thighs in the bottom of the slow cooker and season with salt and pepper.
 Pour sauce over chicken.
 Cover with a lid and cook on low for 4 hours.

 Mix together corn starch with cold water.
 Remove chicken from sauce and set aside.
 Pour corn starch into sauce and cook on high for 15 mins.
 Dice chicken and add back to thickened sauce.

 Serve over rice and topped with more sesame seeds.
