Easy Tasty Baked Mushrooms

I have had a busy and fun couple of weeks! Let me see if I can catch you up.
First I turned 30! I had a lot of fun celebrating with my 3Bs and our hubbies. (ps do you see another 3b in there....that is Amanda, she has officially been asked to me a part of our squad, hehe!)


Then we went to Hawaii with Mommasita, Pinkie and Jeffrey's sister and her hubby. I have always dreamed of going to Hawaii and it was exactly as I dreamed! I felt as if I was placed in a fantasy land! Our trip ended a little rough, with Jeffrey's dad in the hospital from a rouge wave, but he is doing well.






Our friends then got married 2 weeks ago in the Santa Barbara Wine country! It was so fun and we are very happy for them.




Lots of fun to come next month as I go home to Texas for my cabi shows!

Here is a super easy side dish with a lot of flavor!

Easy Baked Mushrooms
1 pound of cremini mushrooms, sliced
3 Tbsp oil
zest of 1 lemon
1/4 cup lemon juice
3 garlic cloves, minced
2 tsp fresh thyme, chopped
1/4 cup grated parmesan
salt and pepper
Preheat oven to 375
Grease a shallow baking dish. Mix together minced garlic, chopped thyme, lemon zest, salt and pepper.

 Gently toss mushrooms with lemon juice, parmesan and herbs.

 Place in oven for 12-15 minutes.

 Remove from oven and serve immediately.
