Biscuit Breakfast Casserole

It has been a busy few weeks! I was gone for 17 days! I had 2 weddings, 2 baby showers and 4 cabi shows! It was crazy, but fun. Here are some pictures from Emily's incredible wedding. It was on April 1st in Temecula. It was one of the sweetest, most beautiful weddings that I have ever been to and I am so happy for them. We are enow neighbors and it is fabulous!

The day before the wedding we went wine tasting. It was a gorgeous winery and was really fun even though I couldn't drink.

Here is a wonderfully easy recipe for a breakfast casserole. I made it for my MOPs group a few weeks ago and it was gone quickly!

Biscuit Breakfast Casserole
7 eggs
1/4 cup milk
3 green onions
2 cups sharp cheddar cheese
salt and pepper
1 16oz can of flaky biscuits
8-12 slices of bacon

Cook bacon in the oven on 350 for 15 minutes

Chop green onions.
Cut biscuit dough into 1 inch squares.
Remove bacon and allow it to drain and cool on a paper towel. Leave oven on 350 to bake the casserole.
Chop bacon.
Mix together eggs, milk, salt and pepper.
Add cheese, green onions, Bacon and biscuits.
Gently fold together to incorporate.
Pour into a 9X13 inch baking dish. Bake on 350 for 25 minutes.
Remove and allow to cool for a few minutes before cutting to serve.
